pork fat, 40 grams

worcestershire sauce, 12 grams
Directions
melt the fat and micro dice the shallots
add both the fat and shallots to a pan and slowly cook until the shallots are soft and clear
cool down the shallot mixture, fine chop the chives while this is cooling
add the chives, Q rub, sour cream, and cooled onion mixture to a bowl and mix well
let mixture sit in the refrigerator for a few hours to chill and marinate before serving
