          Meat
30 minutes
- brew the coffee and set off to the side 
- finely dice the onion, green bell pepper, and celery 
- remove seeds from the serrano pepper and finely dice. 
- mince the garlic 
- add the brisket fat (or lard) to a hot pot and toss in all of the veggies 
- sauté all ingredients together until soft. add the beef, pork, and lamb and stir together. add the remaining spices and sauces, coffee and q rub. stir again. 
- simmer for roughly 30 minutes, stirring regularly to prevent sticking while breaking up the meats.
