Preheat the grill to medium (375°F)
Peel and trim the baby carrots
Combine the carrots and other specified ingredients in a foil packet, then place onto the grill
Cook the carrots for about 15 minutes until they are slightly soft but still firm in the center (test with a small knife)
Move the foil packet to one side of the grill and increase the heat to very high on the open side
Remove the carrots from the foil but retain the foil packet and its liquid for a finishing glaze
Place the carrots on the hot side of the grill and char them, rolling frequently to achieve an even char on all sides
Return the charred carrots to the foil packet, toss with the liquid to glaze
